Don’t Be Shellfish

Cracking a lobster may conjure visions of July cookouts, but here in Florida, spiny lobster season runs from August until March. The spiny lobster differs from the Maine lobster, as it does not have claws. However, their meat is just as tender and delicious. Traditionally harvested at the southern tip of Florida, this crustacean has lean white meat, with a firm, course, and sweet flavor. You’ll find Floridians grilling up some spinies and serving them fresh with butter and lemon.

A few months later, stone crab season begins in October and runs through May. Typically, stone crabs come served in their original shell. You can enjoy stone crab on a bed of ice or hot with drawn butter and a lil’ bit of lime juice. Their meat is extra lean, low in fat and a good source of protein—dare we say they could even be considered diet-friendly??

Another Florida favorite enjoying its peak during the fall is flounder! Flounder is only contained by the imagination of the chef and is delicious whether broiled, blackened, grilled, fried… the list goes on. Our favorite way to prepare flounder is blackened on a toasted sandwich bun with T’s Signature Bam-Bam sauce!

Come Out of Your Shell

There is a huge seasonal difference in the flavors of oysters. In the fall, many people identify oysters has having a more “plump and sweet” taste. Oysters, in general, prefer the cooler months. Grill ‘em, fry ‘em, broil ‘em or roast ‘em; eating oysters can help to boost your immune system! They are a nutritious product that offers 12 different vitamins, 19 distinct amino acids and omega-3 fatty acids.

Although clams are a summer favorite, they taste even better in the fall. Clambakes are the perfect way to spend time with loved ones while enjoying some delicious seafood at the same time. Spice up your clambake by adding bay leaf, garlic, peppercorns, and thyme. You can even add in a serving of chicken stock or white wine to bring out the natural flavors.

Fill Up on Sides

Now that we’ve discussed our favorite fall-time seafood, let’s talk about our all of our fall favorite side dishes. Vegetables have never met a fish they don’t like! Whether you’re ordering up squash, roasted Brussels sprouts, honey glazed carrots, corn or fried okra you can’t go wrong. Cauliflower is another hot side dish with its popularity only matched by the variety of ways to prepare it. There are many health benefits of using cauliflower as a substitute for other dishes—like cauliflower rice! Cauliflower is absolutely loaded with Vitamin C and is a great source of fiber that some studies show can even aid in weight loss.
