Cajun Shrimp Pasta

This creamy Cajun shrimp pasta can be prepared in less than 30 minutes and is jam-packed with flavor. Add Timoti’s Cajun Blackening Blend for extra heat to your home-cooked dish.

Ingredients

8 ounces linguine pasta

1-pound large raw shrimp

1 tablespoon extra-virgin olive oil

1 tablespoon Cajun seasoning (or Timoti’s Cajun Blackening Blend)

2 tablespoons unsalted butter

2 cloves garlic

1 cup heavy cream

½ teaspoon lemon zest

1/3 cup grated Parmesan cheese

Lemon wedges

Parsley

 

Directions

1.     Bring a large pot of water to a boil.

2.     Add linguine and cook for about 8 to 10 minutes.

3.     Drain and reserve ½ cup of the pasta water

4.     In a bowl, combine shrimp, oil, and Cajun seasoning and toss to combine

5.     Heat a large skillet over medium-high heat and add shrimp cooking for about 3 to 5 minutes flipping on each side

6.     Reduce the heat to medium, add butter and garlic cooking until brown

7.     Add heavy cream and lemon zest to the skillet and cook for 1 to 2 minutes.

8.     Stir in parmesan for 1 to 2 minutes

9.     Combine pasta with the sauce, top with shrimp, lemon, parsley and enjoy!

Potato Leek Salmon

This combination of potatoes, leek chowder and salmon is a terrific way to please your sweetheart on Valentine’s Day and any day of the year.

 Ingredients

8 green onions

1 slice of bacon

1 clove garlic

1 leek

Salt to taste

½ teaspoon butter

1 ½ cups diced Yukon Gold potatoes

3 cups water

1 pinch cayenne pepper (or substitute Timoti’s Cajun Blackened Blend)

2 center-cut salmon fillets

1 teaspoon Dijon mustard

Salt and pepper

1 tablespoon vegetable oil

2 tablespoon Asian chili paste

1 green onion, chopped

 

Directions

1.     Boil a large pot of water and add 8 green onions, cooking for about 30 seconds and then soak in ice water for several minutes.

2.     Cook bacon in a large skillet over medium-low heat for about 8 minutes.

3.     Stir in garlic, leek, salt, and butter for about 10 minutes.

4.     Add potatoes and 3 cups of water and season with salt and pepper (cook potatoes for approximately 15 minutes on low heat).

5.     Preheat over to 375 degrees (prepare baking dish with parchment paper and vegetable oil).

6.     Prepare each salmon filet by cutting the belly (bottom 1/3 of the fillet off) and then cut remaining 2/3 of the fillet away from the skin. Cut in half and cut belly horizontally.

7.     Spread each piece with Dijon mustard and top with a slice of salmon belly.

8.     Wrap each salmon pack with two green onions.

9.     Place the salmon, belly-side up in the baking dish.

10.  Bake in oven for about 15 minutes.

11.  Heat Potato leek soup and stir in chopped green onion. Top with salmon and chili paste.

Blackened Snapper

This recipe of blackened snapper has a little bit of spice with lots of flavor and protein and can be served with a variety of side dishes.

 Ingredients

For the lemon, garlic butter:

¼ cup room temperature butter

I teaspoon zest of lemon

2 tablespoons finely chopped fresh parsley leaves

2 cloves chopped

 

For the Blackened Snapper:

1-pound red snapper fillets

1.25 teaspoon salt

1 teaspoon garlic powder

1 teaspoon sweet paprika

½ teaspoon dried thyme

½ teaspoon cayenne pepper (or substitute Timoti’s Cajun Blackened Blend)

½ teaspoon pepper

3 tablespoons extra-virgin olive oil

 

Directions

1.     Combine butter, lemon juice, parsley and garlic in a small bowl and stir. Cover and set aside.

2.     In another bowl combine salt, garlic powder, sweet paprika, cayenne pepper and black pepper.

3.     Rinse fish and dry, slice in half and season both sides with the spice mix (or substitute Timoti’s Cajun Blackened Blend)

4.     Preheat oven to 400 degrees. Add olive oil to a non-stick skillet over medium heat

5.     Add the fish to the pan, flipping on each side for around 3 to 4 minutes. Transfer the fish to a plate and brush one teaspoon of butter on top. Keep the platter of fish warm in the oven cooking the rest of the fish then serve!
