What Is New England-style Clam Chowder?

Clam chowder is a soup with a creamy texture that is made with whole chunks of clam, clam juice, celery, onion potatoes, salt pork or bacon, and seasonings that usually include salt, pepper, parsley, and sage. 

Local New Englanders will tell you that you don’t even need to use all of those seasonings–all that is needed to create the classic taste of clam chowder is white pepper, thyme, and a few bay leaves! 

Regardless of what seasoning is used, there’s no debate that New England-style clam chowder is best eaten with oyster crackers

What Are Defining Features of New England-style Clam Chowder?

New England-style clam chowder is unique from other types of clam chowder because it doesn’t include tomatoes and dairy. 

Manhattan clam chowder, for example, is a clam chowder that uses chicken stock and tomatoes or tomato paste to create a light, red broth with all of the ingredients one would expect. This type of clam chowder also uses bell pepper and crushed red pepper flakes.  

Rhode Island clam chowder is the other major type of clam chowder. This type of chowder prepares the traditional ingredients of clam chowder in a clear broth with Quahog clams. Quahog clams are large clams native to Rhode Island.

What Are New England-style Lobster Rolls? 

New England-style lobster rolls aim to highlight the natural taste of lobster. This type of lobster roll, also considered the Maine lobster roll, serves chilled lobster with mayonnaise on a top-loading bun. Maine lobster rolls are served with a green topping: the most common topping is celery, but it can also be substituted for chives or scallions.

Are There Other Types of Lobster Rolls? 

You might also be familiar with Connecticut lobster rolls.. Connecticut-style lobster rolls serve warm, buttery lobster on a toasted top-loading bun. This type of lobster roll contrasts the sweet taste of butter with lemon juice to create the perfect blend of flavors
